vegetable cheese sandwich


       Sandwiches make a great snack anytime. One can actually add anything for the filling of the sandwich like vegetables, salad, cheese, mayonaaise, mustard sauce, chutney, pesto... and so on. 
      On a lazy sunday when i was not at all in a mood to make a heavy breakfast ... i searched the fridge and found cucumbers and carrots to my rescue.... So i chopped them fine, added mustard sauce and a cheese slice which is my kids favourite.... and the sandwiches were ready.
I used brown bread for a healtier version...  and toasted it with low fat butter beacuse it already has a lot of calories in the form of cheese.


Ingredient:

8 Brown bread slices
1 Cucumber (chopped finely)
1 Carrot (grated)
1 Tomato (chopped finely)
1 Onion (chopped finely)
1 Capsicum (chopped finely)
2 Green chillies(minced)
Corainder leaves (chopped)
1 tbsp Mustard sauce
4 cheese slices
Salt to taste
Butter for toasting

 Method:

  1. To begin mix all the chopped vegetables , mustard sauce and salt in a bowl.
 2. Now take 1 slice of bread and spread the filling on the slice.
 3.Keep 1 cheese slice over the filling.
 4. Cover it with another slice of bread.
 5. Spread butter on the slice and toast it on the tawa or griddle
 6. Toast on both sides on low flame.
 7. Cut the ready sandwich into triangles and serve with tomato ketchup.
Tips:
1. You can use grated cheese instead of cheese slice in case its not available.
2. If you don't want to use butter, the sandwiches can be toasted using olive oil also.
3. Toast the sandwiches on low flame to bring crunchiness.
