Veg thukpa soup

Thukpa is a tibetan noodle soup. It originated in the eastern part of tibet. The dish became popular in Nepal, Bhutan, Sikkim, Assam and Arunachal pradesh in North east India.
My hubby is  really fond of Soup before dinner.... so i keep trying different soups every now n then. So while searching for any differnt soup i came across the Veg Thukpa Soup. Its very easy to make soup and doesnt require much of efforts....
Soups are packed with nutrients and this soup is no exception. I have added a few veggies watever was available in my fridge.... you can add any veggies of your choice.
The boiled noodles are added to the Thukpa just before serving....  So my kids were like Wow mumma..... Soupy noodles (as they see on TV). To make the soup kids friendly the amount of chillies can be reduced or eliminated.

Ingredients:


  • 1 cup dry noodles 
  • 1 tbsp oil
  • 1/2 tsp ginger (chopped)
  • 1 tsp garlic (chopped)
  • 1 bunch spinach (chopped)
  • 1/2 small onion (diced)
  • 1/4 cup beans (chopped)
  • 1 small carrot (chopped)
  • 1/2 tomato (chopped)
  • 1-2 Spring onions (chopped)
  • 1 tbsp Soya Sauce
  • 1/8 tsp of Pepper Powder
  • Salt to taste
  • 2 cups water
  • Cilantro to garnish

Method:


1. Cook the noodles in a pot of boiling water with few drops of oil and 1 pinch of salt. As the noodles boil, drain the water and run the noodles under cold water and set aside.
2. Next heat oil in a sauce pan, Add the ginger and garlic... saute` for 9-10 seconds.
3. Add the onions and green chillies and cook for 2 minutes
4. Add the carrots and beans cook for a minute and add the tomatoes.
5. When the tomatoes become soft add water and bring it to a boil. Boil for 2-3 minutes.
6. Add the spinach, half of the spring onions, soya sauce, salt and pepper  and keep boiling for 2 more minutes. Check if the vegetables are soft... if not cook for few more minutes.
7. To serve... Place the noodles in the soup bowl and pour the Thukpa soup over the noodles. Garnish with leftover spring onions and cilantro and serve hot.
