WHITE SAUCE PASTA WITH MAYONNAISE

PASTA.... the word itself makes you go slurrrp.... my 4 yr old son jst loves it. He wants it every friday for his tiffin. I gave him the usual cheese pasta for his tiffin earlier, but the cheese got stuck to the pasta and he just cudn't eat his favourite food. One of my friend suggested me to use mayonnaise instead of cheese to prevent it from sticking.... So i tried it...and Bingo!! it worked.
I have used elbow pasta here because i feel its lil faster to cook and easy to eat. You can use any pasta of your choice. The recipe is bit differnt from the usual italian pasta. So its an Indian desi version of the Italian pasta.
I have used only onions and capsicum veggies... but u can use all sorts of veggies like spinach, mushrooms or even sweet corn.

STEP BY STEP PICS OF MAYONNAISE PASTA

1. INGREDIENTS

2. In a non stick pan put olive oil. once warm add the onions and capsicum. Cook for 2-3 minutes. The veggies shud get cooked but should maintain its crunciness.

3. Add mayonnaise and cook for less than a minute. Cooking more would let the mayonnaise leave oil. Then add the seasonings oregano and chilly flakes.

4. Forgot to take pic of milk in the ingredients list. Once the mayonnaise gets mixed add 1 cup of milk to make the sauce. Bring it to a boil then add salt. Be very careful while adding salt because mayonnaise has salt in it.

5. Now its time to add the boiled pasta. Mix it well in the sauce. Cook for another 2 mins.

INGREDIENTS:

1. Boiled pasta- 1 cup
2. Milk- 1 cup
3. Onions- 1/2 cup
4. Capsicum- 1/2 cup
5. Mayonnaise- 3 tbsp.
6. Salt to taste
7. Oregano- 1 tsp
8. Chilly flakes- 1 tsp
9. Olive oil- 1 tbsp

METHOD:-

1. In a non stick pan add olive oil, once its warm add onions and capsicum. Cook for 2-3 mins. The veggies should be cooked but should be crunchy.

2. Add the mayonnaise and the herbs(oregano and chilly flakes)

3.Now add milk. Bring it to a boil then add salt. Now add the pasta. Let it cook for another 2 mins. And your pasta is ready.

Notes;-
The pasta should be Al dente i.e jst cooked. We don't want a soogy pasta. To boil the pasta, in 3 cups boiling water add 1 tsp oil and a pinch of salt. Add raw pasta. Keep boiling. It would take 5-7 mins to boil the pasta. Once cooked run through running cold water. Drain and keep aside. Add 2-3 drops of oil to the cooked pasta to prevent them from sticking to each other.
