BABY POTATO RELISH

 
 Baby potato relish.... a simple and easy to prepare baby potato recipe with cherry tomatoes. Last week my husband bought cherry tomatoes from the nearby grocery store. i was wondering what to do with it. Had some baby potaoes at home. so thought of making this simple yet interesting recipe. I was doubtful whether my kids would like it or not..... but to my surprise they just loved it and wanted more of it.

1.

Peel the baby potatoes, poke them with a fork and shallow fry them in 1 tbsp oil till completely cooked. Cut the cherry tomatoes in half. Crush the garlic in mortal nd pestol. Curry leaves, mustard seeds cumin seeds.

In 1 tsp oil, first put mustard seeds. Once it crackles add cumin seeds and let it crackle as well. Then add the curry leaves and crushed garlic with a pinch of hing and turmeric powder.

Now add the tomatoes and cook them little mushy.

Add coriander powder, chilly powder  and salt.

 Now add the baby potaoes and coriander leaves. Cook for 2 mins.

Now add 1 cup water and bring it to a boil. Reduce the water. Keep enough water to be eaten  with rice. Though if you want to eat it with chapati just dry the water completely.

Your Baby potato Relish with cherry tomatoes is ready.

Ingredients:

Baby potaoes- 1 cup (peeled, poked and shallow fried)

Cherry tomatoes- 1/2 cup (halved)

Curry leaves - 1 sprig

Garlic - 5-6 (crushed)

Mustard seeds- 1/2 tsp

Cumin seeds - 1/2 tsp

Turmeric - 1/2 tsp

Coriander powder- 1 tsp

Chilly powder - 1/2 tsp

Hing- 1 pinch

Salt to taste
   
Oil - 2 tbsp

Water- 1 cup

Method:

1. Peel the baby potaoes, poke them with a fork and shallow fry them in 1 tbsp oil. If you wish you can also deep fry the potatoes in more oil.

2. In a shallow pan or kadhai put 1 tbsp oil. Add mustard seeds, Once it splutters add the cumin seeds. Then add the curry leaves, crushed garlic, a pinch of hing and turmeric powder. 

3. Add the tomatoes and cook till little mushy. The tomatoes should become soft but should retain its shape.

4. Now add the masalas... coriander powder. chilly powder and salt. Give it a quick stir and immediately add the fried potatoes and coriander leaves. Cook for 2 mins then add 1 cup water. Bring it to a boil. Let it boil for 2-3 mins. If u wish to keep it dry boil it more so that all the water gets evaporated. I chose to keep some water so that it can be eaten with rice.
