At times i really like to take time and prepare extensive dishes which require lot of efforts. But sometimes i am too lazy to cook. For such days i really look for ready in minutes recipes.
Paneer jalfrezi is such a recipe which is easy to make, requires minimum prep time and the cooking time is just a few minutes. I used onions,capsicum and tomatoes in addition to the paneer. You can use any veggies of your choice.... Babycorns and mushrooms can also go well with it.
This dish is cooked on a high heat and you need to just keep adding the veggies and cook them for a few seconds. The dish is a semi-cooked slightly sour dry sabji which is usually medium spiced. So if you are looking for a easy paneer dish that can be prepared in a jiffy, just give it a try....

Step by Step recipe of Paneer Jalfrezi:
Ingredients:
- 200gms Paneer, cut into thin rectangles
- 1 big onion, sliced
- 1 capsicum, sliced
- 1 tomato, deseeded and sliced
- 1/2 cup tomato ketchup
- 1 tbsp white vinegar
- 2 whole red chillies
- 1/2 tsp cumin seeds
- 2 tbsp oil
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- Salt to taste
- Coriander leaves for garnish
Method:
- To prepare Paneer jalfrezi, take a non-stick pan and heat oil in it. Once hot add the cumin seeds and let them splutter. Then add the whole red chillies and saute till they change their colour. Then add sliced onions, capsicum and tomatoes and cook for 1 minute.
- Add salt, red chilli powder and turmeric powder. saute for a minute, add vinegar and stir. Now add the tomato ketchup and stir.
- Now its time to add the paneer slices. After adding the paneer give it a toss so that the sauce coats the paneer. Add coriander leaves and turn of the flame.
- Super delicious paneer jalfrezi is ready in minutes. Enjoy with hot Phulkas or Parathas.
