Potato salad with cucumber and mint



  Salads... as we all know are packed with great nutrition and health. I personally prefer to have atleast 1 bowl of salad everyday atleast once. My 3 yr old daughter also just loves salads, may it be a fruit salad or a veggie one.
   This potato and cucumber salad is very refreshing coz of the cucumbers,lettuce and mint, at the same time its quite filling coz of the potatoes.
I have used english cucumbers, such cucumbers have a thin skin which i haven't peeled. If using Indian cucumbers you can peel of the skin to avoid bitterness. I have also added deseeded tomatoes and red bell peppers to add some colour not forgetting their health benefits.

Ingredients:

  • 2 medium sized Potatoes
  • 1 English cucumber,deseeded and cubed
  • 1/2 bunch of Fresh mint
  • 1/2 Red bell pepper,cubed
  • 1 medium firm Tomato, deseeded and cubed
  • 1 tbsp lemon juice
  • 1/2 tsp ground Cumin
  • 1/2 tsp ground Coriander
  • 1/8 tsp Red chilli powder
  • Freshly ground Black pepper as desired
  • Salt as desired
  • Lettuce leaves for serving.

Method:

  1. Wash and dice the potatoes. In a large pot boil 2 cups of water with some salt. Add the diced potatoes and cook them till done. Drain and cook aside.
  2. In another bowl mix the boiled potatoes, cucumbers,red bell pepper and tomato. Chop the mint leaves and add to the bowl.
  3. In a small bowl, prepare the dressing by adding lemon juice, ground cumin, ground coriander, red chilli powder, black pepper and salt. Whisk the dressing well.
  4. Add the prepared dressing to the bowl of salad and toss gently. Cover and leave to stand for about 1 hour.
  5. Serve over lettuce leaves.
