Knowing the benefits of Spinach/Palak i personally make sure that i cook atleast one palak dish in a week.... and Palak Paneer is my hubby's absolute favourite.
Palak dishes are not very pleasing to everybody's eyes... especially to encourage kids to eat palak is really a tough task. But if this beautiful vegetable is cooked with respect it can do great wonders...
One very important thing to be kept in mind while making Palak is that the palak leaves should be cleaned very very nicely.... Coz it carries a fairly good amount of mud with it which is not good for health. So what i do is first separate the leaves from the bunch of palak and soak it a big bowl filled with water and keep it still for 5-7 mins. Then i carefully remove the leaves from top and discard the water. I repeat this process for atleast 2-3 times making sure there is no mud left on the leaves.

So here is the receipe of Palak Paneer...
Ingredients:
- 200 gms Paneer or cottage cheese, cubed
- 500 gms Palak or Spinach, blanced and pureed
- 1 big Onion , grated
- 1 tbsp ginger- garlic paste
- 1 tsp green chilli paste
- Salt to taste
- 1/2 tsp Garam masala
- 1 tsp Cumin powder
- 3 tbsp Oil
- 1 tbsp Fresh cream
Method:
- Wash the palak leaves. In a pot add 4 cups of water and 1 pinch of salt and boil. Add the palak leaves and boil for 3 mins. Immediately transfer the Palak leaves to bowl filled with cool water. Squeeze excess water and finely puree it in a blender. Keep aside.
- In a pan or kadai, heat oil. Once hot add the ginger- garlic paste,green chilli paste and stir-fry for 1 min.
- Then add grated onion and saute` till golden brown.
- Add the garam masala and cumin powder.
- Add the spinach puree and 1/2 cup water and cook for 4-5 minutes.
- Add the paneer cubes to the gravy and boil for 2 more mins and turn off the flame.
- Transfer to a serving bowl and garnish with grated paneer.
