Rava laddoo

RAVA LADDOO
    Rava laddoo is a traditional maharashtrian dessert. These laddoo are prepared during almost all Indian festivals epecially during Ganesha chaturthi and Diwali. 
   I and my son are true Sweet tooths..... and when it comes to desserts like Rava laddoos we just can't stop ourselves from binging into it... Its like its gone in a day after making a box full of laddoos.... They are just unresistable
    These Rava or sooji laddoos are very easy to prepare and requires very less ingredients. I learnt this recipe from my husband's paternal aunt long back. Since then i have been making these laddoos every now and then.

    So here is the recipe of super delicious.... super easy to make semolina laddoos...


Ingredients:

Sooji or Rava            - 1 cup
Dessicated coconut        - 1/2 cup
Powdered sugar           - 1/2 cup
Cardomom powder        - 1/4 tsp
Ghee                       - 2 tbsp
Cashews                   - 9-10 nos
Raisins                 - 9-10 nos
Milk                   - 1/2cup(approx.) 
  

Method:

1. In a thick bottom pan or kadai heat 1 tbsp Ghee and fry the cashews first. Fry them in low heat till light golden and keep aside. Then fry the raisins in low heat and keep aside as it puffs.
2. In the same kadai now heat the remaining ghee. keep the flame to low to medium and add the Rava to it. Roast it nicely for about 5-6 mins stirring continously to avoid burning of the rava.
3. Once the semolina gets roasted add the dessicated coconut powder and cook for another 2 mins while stirring continously.
4. Now add the Cardomom powder, half of the Cashews& raisins and sugar and stir well so that all the ingredients get mixed well together. Turn of the flame. Don,t cook for too long because then the sugar will start to melt and caramelise... thus making the ladoos very firm.
 5. Add about ¼ cup of hot milk and give it a mix and let it cool down slightly. Don't let the mixture to cool down completely.... It should be cool enough to hold it in your hands but not very cold otherwise you will not be able to form the laddoos.

6. Now take about 1 1/2 tbsp of mixture in ur palm and fold it firmly to make a laddoo. If the mixture is powdery add some more hot milk and make the ladoos.
Garnish with the leftover cashews and raisins.
