Broccoli... inspite of knowing it for so many years that this not so gud looking veggie is filled with lots and lots of nutritive values..... I never thought of trying it. But Few days back i thought of giving it a try... so searched a few recipes and finally ended up making a stir fry broccoli with peanuts.
Peanuts add a nice crunch to the sabji.... and the broccoli actually tastes good. I am not at all fond of cauliflower.... but broccoli... really its yummy. So here is the recipe of Stir fry broccoli with peanuts.... Must try coz it easy and simple and tasty....
Ingredients:
Broccoli florets - 2 cupsCapsicum - 1 cup (diced)
Onion - 1 cup (thinly sliced)
Tomato - 1 small (finely chopped)
Oil - 1 tbsp
Cumin seeds - 1/2 tsp
Ginger-garlic paste - 1 tsp
Salt to taste
Turmeric - 1 tsp+1tsp
Red chilly powder - 1/2 tsp
Garam masala - 1/2 tsp
Roasted peanuts - 2 tbsp (crushed)
Method:
1. Just like cauliflower even broccoli carries worm in it at times. First cut the broccoli florets, then immerse them in 3-4 cups of hot water mixed with 1tsp turmeric and a pinch of salt in it for 5 mins. This will remove all the dirt and worms from the broccoli. Drain the water and keep aside the florets.
2. Take a non-stick pan and heat oil in it. Then add cumin seeds and let them splutter. Then add ginger garlic paste and saute` for 2 mins on low flame.
3. Add the thinly sliced onions and cook them till translucent on medium heat.
4. Then add the tomatoes and turmeric powder and cook till the tomatoes turn soft and mushy. It would take 3-4 mins on medium heat.
5. Now add the broccoli florets, capsicum and salt. Give it a stir and cover it with a lid for 2 mins then cook for 3-4 without lid.
6. Now add red chilly powder and garam masala. Because its a stir fry we dont need to cook too much.
7. Just before turning off the flame add the roasted peanuts, give it a stir.
Broccolli stir fry is ready.... Enjoy it just like that or with phulkas or parathas....
Tips:
You can add the Peanuts just before serving also, or you can add half of it while cooking and half while serving if you like the peanuts crunchy.
