Veg kadai.... It is an extremely easy to make recipe with simple vegetables. It usually happens in almost all households that by the last day of the week all vegetables in the fridge are almost over and all that is left are few capsicums and carrots. Same happens with me... and i feel so lazy to cook on weekends. So this recipe is always a saviour. Its easy to prepare with simple spices and some fresh cream. Yet the result is always facsinating... which leaves everybody just drool over it.
Ingredients:
Onions - 1 big (sliced)
Capsicum - 2 (cut length wise or julliened)
Carrots - 2 ( cut in 2 inch slices)
Tomato - 1 ( cut length wise)
Green chillies- 2
Oil - 1 tbsp
Cumin seeds- 1/2 tsp
Fresh cream - 2 tbsp
Degi mirch - 1 tsp
Red chilly powder - 1/2 tsp
Coriander powder- 1 tsp
Cumin powder- 1/2 tsp
Garam masala powder - 1/2 tsp
Salt to taste
Kasuri methi - 1 tsp
Cilantro to garnish
Method to prepare Veg kadai:
1. In a pan or kadai heat 1 tsp oil. Once hot add cumin seeds and let it splutter.
2. Now add onions and green chillies. Saute` it till onions turn translucent. Then add carrots and cook it for 2 mins. Then add capsicum and cook for another 2 mins. Then add tomatoes and degi mirch and cook for 2-3 mins till veggies become tender. Don't cover and cook because it will make the veggies too soft. We want to cook the veggies till they are just done.
3. Now add all the spices i.e coriander powder, cumin powder, garam masala and red chilly powder. Don't add salt now because salt tends to break down the veggies and here we want a crunch in the veggies.
4. Saute` for 1 more min. Then add fresh cream. Stir, add salt and crushed kasuri methi. Give it a quick stir and turn off the flame.
5. Garnish with cilantro and Veg kadai is ready to be served with roties or naan.
Tips:
1. Adjust the amount of red chilly powder and green chillies according to your taste.
2. Dont use turmeric powder because it will change the colour of the dish. Degi mirch is used to enhance the colour of the dish.
3. You can use all coloured peppers(capsicum). I have used green and red capsicums.
